Tuesday at the Table



A little late in the day, but I am soooooo glad to be part of this weeks Tuesday at the Table hosted by Cole of All the Small Stuff! Go visit Cole as she is having an awesome giveaway AND is planning more for later in the month!

Today and next Tuesday I am featuring an easy dinner for one! My DH was out of pocket this past Saturday and I had fun making this Quick and Easy Caprese with Smoked Mozzarella Salad.Look for my easy Pizza for One next Tuesday!

I am a "little bit of this" and little bit of that" cook, so please adjust everything to taste! This is a twist on traditional Caprese that I put together.


Caprese-Salad
Caprese Salad with Smoked Mozzarella

5 slices fresh smoked mozzarella

4 slices tomato - I am using Roma (I no longer live in NJ and get good Jersey maters)

9 fresh basil leaves

1 tablespoon cut basil (1 or 2 fresh leaves cut with kitchen shears) for garnish

Balsamic Vinagrette Salad Dressing (I use Paul Newmans Light Baslamic...you can use 1 tablespoon Balsamic vinegar and 1 tablesoon olive oil mixed well also)

1 Tablespoon red onion roughly chopped

Fresh Spring Greens

Place fresh greens on a chilled serving plate or shallow salad bowl

Sprinkle chopped red onion over greens

Layer tomato/basil leaf/slice cheese

Lightly sprinkle balsamic vinegar over the salad, garnish with cut basil!

Enjoy!

  1. I love caprese, especially with heirloom tomatoes. Sometimes I use burrata. Unfortunately it is the end of the summer tomatoes. :(
